Pink Dragon Fruit Oatmeal

I couldn’t be more excited to share this Valentine’s Day inspired recipe with you! What really makes this recipe special is the tropical, sweet taste of the dragon fruit paired with the candy-like taste of chewy, dried goji berries (convinced I discovered the best food pairing of all time). Walnuts add a crunch, while fresh cranberries balance the sweetness of the recipe with a mild tart flavor. 

This recipe uses many superfoods, and is especially rich in antioxidants. It’s also vegan and gluten-free.

  • Organic rolled oats: This naturally gluten-free whole grain provides long-lasting energy that will keep you feeling full for longer. It’s also higher in protein than most grains. They’re loaded with nutrients, and minerals like iron, phosphorus, magnesium, zinc, folate, B vitamins, & more. Oats contain powerful antioxidants, called avenanthramides. I recommend always purchasing organic, as oats are often exposed to glyphosate.

Pink Dragon Fruit Oatmeal

Ingredients
  

  • 1 cup organic oats
  • 1 cup dragon fruit
  • 1 cup plant-based milk
  • 1 cup filtered water
  • 1 tsp chia seeds
  • 1/4 tsp cinnamon
  • 1-2 tbsp brown sugar (add more or less depending on desired sweetness)
  • 1 tsp ground flax seeds
  • 1 banana
  • goji berries
  • walnuts
  • cranberries

Instructions
 

  • Add the water, plant-based milk, and oats to a pot and bring to a low boil.
  • Once at a boil, add the dragon fruit. Continue to let it simmer and stir occasionally until the consistency is thick (usually takes about 5-10 minutes).
  • Once it's at your desired consistency, remove from the heat. Serve with a banana, and add the rest of the toppings.

Helpful Tips

  • I recommend making extra servings of this recipe to eat later in the week. Store it in the fridge for 3-5 days, or in the freezer for up to a month. I like keeping it in mason jars so that I can easily bring it with me and reheat it later if I’m on the go.
  • Frozen dragon fruit is ideal for this recipe because it’s picked in season at peak ripeness.
